El Xef is all about rebelliousness, risk, and fusion in a constantly evolving cuisine full of nuances and artistry. He found his vocation while just a teenager. In 2010, he received his first Michelin star and the Spanish National Gastronomy Prize. Two years later, the second one. And in 2013 came international recognition when he became the youngest chef to receive a third Michelin star. In 2014, he brought his DiverXo restaurant to the NH Collection Madrid Eurobuilding, forming part of NH's ambitious gastronomic plans.

Paco Roncero is one of the chief exponents of the Spanish culinary avant-garde at home and abroad, which is reflected in his way of understanding gastronomy as a unique sensory experience. Since joining NH Collection Casino de Madrid more than 20 years ago, we have witnessed an explosion of creative personality, which engendered a veritable revolution with Paco Roncero Restaurante. The NH Barcelona Stadium hotel welcomes the Don Giovanni restaurant, from the Italian chef, who has 1 Repsol sun.
